The fermentation tanks.

The Trois Rivières distillery has 15 fermentation tanks, each with a capacity of 33,000 liters.

During fermentation, under the action of yeast, the sugar present in the cane juice is transformed into alcohol; after 24 hours, we obtain a cane wine with about 4 to 5°.

Note that these tanks are open to the air.

In my opinion, the few mosquitoes that drown in them add body to the rum and contribute to the secret of its production!!!
